MAKE THE APPLE PIE FILLING
To a pan over medium heat, add the butter, apples, light brown sugar, cinnamon, salt, vanilla extract, and lemon juice.
Mix together and allow to simmer on low heat for 6 to 8 minutes until the apples are soft when poked with a fork.
Combine the water and cornstarch in a small bowl to make the cornstarch slurry and add this to the pan. Mix together to thicken the filling and then take off the heat and transfer to a bowl.
ASSEMBLE AND BAKE THE BREAD PUDDING
Preheat the oven to 350°F.
In a measuring glass or bowl, add the half and half, melted butter, one egg, vanilla extract, white sugar, and salt. Whisk together until smooth.
Tear apart the sweet rolls into smaller sections and add to a large mixing bowl.
Pour the milk mixture over the rolls and gently toss with a rubber spatula to combine.
To two individual skillets, add a layer of the soaked bread on the bottom. Then add a layer of the apple pie filling. Then cover with another layer of soaked bread.
Pop in the oven to bake for 15 to 20 minutes in the middle rack until the top is golden brown and the center is set.
Serve warm with vanilla ice cream if you'd like!
