Upside Down Almond Fig Cake

Upside down pineapple cake BUT fig version!

A lot of North African desserts are huge on almond. Almond paste, almond flour, almond essence, chopped almonds, and more. They can be found in Abambar, a traditional Libyan cookie, or stuffed in Briwat, a traditional Moroccan sweet.

Since my dad planted a fig tree in the backyard, I’ve been inspired to try and create as many fig recipes as possible so this is my take on a pineapple upside down cake.

Figs, almonds, and a squeeze of lemon to balance out the sugar. It’s moist from the yogurt and has notes of olive oil. Coffee and cake time just got a little sweeter.

Ingredients

1 cup all purpose flour
1 1/2 cup almond flour
1 tablespoon baking powder
1/2 teaspoon salt
4 eggs
1 1/2 cup sugar
1/3 cup olive oil
1/3 cup greek yogurt
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1/2 tablespoon unsalted butter
3 tablespoons brown sugar
6-7 figs
lemon

Instructions

Preheat oven to 350F.

In a small bowl, whisk together all purpose flour, almond flour, baking powder, and salt.

In another large bowl, beat the eggs and sugar until it lightens up with bubbles.

Incorporate the flour by folding it in or using a paddle attachment. Now fold in the olive oil, yogurt, and vanilla and almond extract as well.

Prepare a cake pan by cutting out a circular piece of parchment paper to fit the bottom of the pan. Butter the parchment and the sides of the pan. Sprinkle the brown sugar evenly over the butter.

Slice your figs thinly and spread evenly over the brown sugar. Squeeze a bit of fresh lemon over the figs and add a sprinkle of brown sugar (optional). Then pour the cake batter completely over.

Bake for 50 minutes or until toothpick comes out clean. Slice and enjoy with more fresh figs, powdered sugar, and sliced almonds.

    Hi Hajar! I made this exactly as the recipe says and it was life-changing. The flavor was incredibly unique and a perfect way to end the day. Served it with fresh rosewater whipped cream which complimented the density of the cake really well. It was a hit. Thank you!
