Surf and Turf Rice

Turning a shrimp boil into a surf and turf rice dish! Spiced with Cajun and Old Bay, this dish is flav0r-packed and will blow you away.

If you are not a huge fan of seafood, you can definitely just turn this into a chicken and rice dish. Still delicious!

Ingredients

1 pound chicken thighs, boneless and skinless
1 pound shrimp, deveined and tail off
2 teaspoons Cajun seasoning, x2
2 teaspoons Old Bay seasoning, x2
1/2 teaspoon garlic powder, x2
1/2 teaspoon thyme, x2
1/2 teaspoon black pepper, x2
2 tablespoons olive oil
1 1/2 cup basmati rice
3 cups chicken stock
3 teaspoons fresh garlic, minced
1/4 cup unsalted butter
juice of 1 whole lemon
1 teaspoon salt
2 tablespoons parsley, chopped
2 tablespoons cilantro, chopped

Instructions

MARINADE THE CHICKEN AND SHRIMP: Add the cajun, old bay, garlic powder, thyme, and black pepper to both the chicken and shrimp in separate bowls. The chicken and shrimp are marinated with the same spices and same amount (for example, add 2 teaspoons of cajun to the chicken and another 2 teaspoons to the shrimp). Mix to evenly coat.

COOK THE CHICKEN: Add 1 tablespoon of vegetable or olive oil to a pan over medium-high heat. Add the chicken thighs and spread evenly apart. Allow it to sear on one side for 4-5 minutes until a nice golden brown crust forms. Flip over to the other side and repeat. Then drop the heat to low and let it cook for 3 more minutes. Take off the heat when cooked fully through.

COOK THE SHRIMP: Add 1 tablespoon of vegetable or olive oil to a pan over high heat. Add the shrimp and spread evenly apart. Allow it to sear on one side. Flip over to the other side and repeat. Once they are no longer pink and have a nice sear, take off the heat immediately and transfer to a bowl.

COOK THE RICE: Wash your rice really well until the water runs clear. In a large pan, add the garlic, butter, lemon juice, salt, and chicken stock over medium high heat. Once the stock is simmering, add the rice, parsley, and cilantro in. Bring to a slight bowl and then drop the heat to simmer. Cover and let it cook for about 18 minutes or until tender. Take off the heat, fluff with a fork. Top with the protein and optional garnishes of chili flakes, lemon wedges, and more chopped parsley. Enjoy!

      Is a seasoning blend that is commonly used for seafood. You can buy it at any regular grocery store!
