Crispy Shrimp Balls

 There is no better way to eat shrimp than wrapped up in a ball and fried to crispy golden perfection! This popular Chinese appetizer is absolutely addicting especially when dipped in a sweet chili sauce. Now these shrimp balls are actually really easy to make and utilize a secret ingredient for the crispiest exterior crunch – EGG ROLL WRAPPERS!

How to Make the Shrimp Filling

The easiest part of this recipe is making the shrimp filling. It takes less than 5 minutes to make!

Here are all the ingredients you will need:

  • raw shrimp
  • cream cheese
  • green onion
  • cilantro
  • ginger
  • garlic
  • egg
  • cornstarch
  • black pepper
  • salt 
  • red pepper flakes

Start out by chopping the shrimp into a very fine mince. You can also add the shrimp to a food processor and pulse it but I prefer to use a knife so I can control the size of the mince. 

Then combine the shrimp with all the ingredients listed above in a large bowl. The result should be a sticky consistency that is easily shaped into a ball. And that’s it for the filling! 

The Secret Ingredient

After the shrimp filling is prepared, it’s time to roll them in a secret ingredient that makes them super crispy when fried! That ingredient is egg roll wrappers. 

Take egg roll wrappers and cut into two long rectangles. Then cut each rectangle into small very thin strips. 

Another option instead of egg roll wrappers is to use spring roll pastry wrappers! Either will work well but I prefer egg roll wrappers. 

Shaping and Frying

Once the shrimp filling is in ball shape, roll it around in the thinly sliced egg roll wrappers and press on firmly.

Then it’s ready to be fried to crispy golden perfection! This also works well in the air-fryer just like regular egg rolls. Just spray them generously with oil spray and they’ll be good to go.

For the oil, use any that is suitable for frying at very high temperatures like vegetable, canola, or peanut oil. Make sure it is hot enough (350°F) so that the egg roll wrapper can get crispy and not soak up oil. But make sure it is not too hot so the egg roll wrapper doesn’t burn without the inside shrimp filling not cooking.

Ingredients
  

  • 1 pound raw shrimp (peeled, de-veined, tail-off) finely minced
  • 10 egg roll wrappers cut into small strips
  • 1/4 cup cream cheese softened
  • 1 tablespoon low sodium soy sauce
  • 1 to 2 whole green onions thinly sliced
  • 1 tablespoon cilantro finely chopped
  • 2 teaspoons garlic finely minced
  • 1 teaspoon ginger paste
  • 2 to 3 tablespoons cornstarch
  • 1/2 teaspoon black pepper more to taste
  • 1/2 teaspoon salt more to taste
  • 1/2 teaspoon red pepper flakes
  • 1 egg (optional, if mixture is sticky don't add)
  • vegetable oil for frying
  • sweet chili sauce for dipping

Instructions
 

  • To a mixing bowl, combine the minced shrimp with the cream cheese, soy sauce, green onions, cilantro, garlic, ginger, cornstarch, black pepper, salt, red pepper flakes, and egg if needed. The consistency should be sticky and easily shapeable.
  • Shape the shrimp into a small ball with about 1 to 2 tablespoons of filling.
  • Coat each ball in the egg roll wrappers and press tightly so it adheres well.
  • Heat oil in a deep pan until it reaches 350°F.
  • Place the shrimp balls in the hot oil and fry until beautifully golden brown and cooked in the center. Make sure the heat is not too high or else the outside will brown before the center cooks.
  • Transfer to a wire rack to let any excess oil drain and then enjoy with sweet chili dipping sauce!

Notes

Next time I make these, I will omit the egg as I find it did not need it. The mixture is already sticky as is.
